Brian Gibson

Executive Chef

Our community has earned the label of "resort-style living," not only because of the amenities, but in large part because of the world-class cuisine designed by Brian Gibson, a Four Seasons-trained chef. Brian spent 13 years as a chef at the Four Seasons in Austin where he prepared dinners for US Presidents, Texas Governors and a myriad of international celebrities. There, he developed his "East Meets the Texas West" Asian fusion influence that today he uses to match the eclectic palates of our residents.

Mino Di Martino

Food & Beverage Director

Mino brings a world of experience to Cimarron Hills. He lived in his hometown of Sorrento, Italy, until he graduated with a degree in hotel and restaurant management. His career then took him to restaurants in England, France and Germany. From there, he joined Princess Cruise Line serving the Panama Canal, Mexican Riviera, Caribbean and Alaska. Later it was the Four Seasons Palm Beach Resort, and then the Trump Mar-A-Lago Club on Palm Beach as Maitre D’Hotel and food and beverage manager. There he managed large events for Donald Trump, Elton John and many others.
